As we head into the holiday season, our friends at Sketti & Ball Co. (1584 Argyle Street) have shared a special recipe that captures the magic of this festive time. Whether you’re hosting family and friends or just treating yourself, these Ice Cream Sandwiches offer a fun twist on a classic holiday cookie.
Feel free to enjoy the Spice Cookies on their own as well; they pair nicely with a warm cup of tea – perfect for a cozy afternoon by the fire!

Makes approximately 8 ice cream sandwiches.

Ingredients
- 225 grams unsalted butter, softened
- 625 grams white sugar
- 3 eggs
- 300 grams molasses
- 800 grams all-purpose flour
- 25 grams baking soda
- 8 grams dried ginger
- 1 teaspoon cinnamon powder
- 1 teaspoon ground cloves
- 1 teaspoon ground cardamom

Instructions
Preheat the oven to 325 degrees Fahrenheit.
1. In a stand mixer, or using a hand mixer, cream butter and sugar until light in colour.
2. Slowly add eggs, continuing to mix.
3. Add molasses, continuing to mix.
4. Sift all dry ingredients together and add to the wet ingredients until just mixed, being careful not to over mix.
5. Using a large ice cream scoop portion (approximately 4 oz), spoon the mixture into your hands and roll it into a ball shape.
6. Roll the ball in sugar to coat.
7. Place on baking sheet and press flat, using the palm of your hand.
8. Bake for 10-15 minutes until set. Remove from oven.
9. Allow cookies to cool on baking sheet for 5 minutes, transfer to wire rack and let cool completely.
10. Once cookies have cooled completely, assemble the cookie sandwiches. Scoop eggnog ice cream (or the ice cream of your choice) onto the bottom of one cookie, then sandwich another cookie on top of it. Gently press the top cookie down to make a compact sandwich.
12. Serve immediately, or wrap individually and freeze for later. If frozen, allow 5-10 minutes to soften slightly before serving.
